Winter Citrus Salad

Pretty… simple…. refreshing… and delicious Winter Citrus Salad.  Neely Wang introduced this salad in her recent blog post, here.  Her beautiful photos enticed me to try it… and glad I did. Neely was the photographer at an event that featured Chef Tony Najiola of Central Market.  He was gracious to provide the winter citrus salad recipe for us to try.

Winter Citrus Salad

The following recipe was adapted from Chef Najiola’s recipe.  I changed a few steps in the instruction and some ingredients due to availability .  The original recipe can be found at Neely Wang’s website, here.

makes 6 servings

Ingredients

For the salad
3-4  oranges {navel, cara cara or blood oranges} and/or grapefruit, peeled with pith removed
3    cups mixed green salad or arugula
½  cup red onion , sliced finely
4    ounces feta cheese
1     cup shaved fennel, sliced finely  {optional}

For the vinaigrette
1     cup extra virgin olive oil
¼   cup red wine vinegar
2     tablespoon lemon juice
2     tablespoon minced shallots
2     teaspoon chopped oregano
2     teaspoon chopped mint
⅛    teaspoon sugar {optional}
salt and pepper

Tip:  soak feta in water for 20 minutes to desalinate it and to make it creamy and not as salty.

Winter Citrus Salad dressing

Step 1.  In a bowl, combine all the ingredients for the vinaigrette and whisk the mixture together.  Set aside.

step 2.  Slice off orange ends, set it down on one end and with a knife start from the top, cut downward to remove the outer layer and white pith.  Repeat with the other oranges.

step 3.  Cut the oranges into ¼-inch thick slices.

{navel orange, blood orange, and pink grapefruit… they were not marinated in the vinaigrette as instructed in the original recipe}

step 4.  Combine mixed green salad/arugula, red onion, and fennel {optional}.  Toss the salad with small amount of vinaigrette.  Drizzle more later if you desire.

step 5.  Arrange orange slices on a platter or individual dishes, add salad mixture.

step 6.  Top salad mixture with crumbled feta cheese.
