Whipped sweet potatoes with caramelized apples is a delicious side dish for this time of year. It’s not too sweet and the combination of creamy and chunky mixed with sweet and tart all in one dish is just right.

I was introduced to whipped sweet potato recipe in 1995 when my November issue of Martha Stewart Living magazine {above pic} arrived in the mail.  I have used many wonderful recipes from it and especially the “Turkey 101” section that had the step by step guide on how to prepare and cook a turkey.  I followed the instructions and cooked my first turkey that year.  I was so thrilled that I actually did it {and made gravy too}. The whole process was not as complicated or intimidating as I had envisioned it.

Remembering September 11

September 11, 2001

The day the United States of America came under attack.
To read the morning account chronologically of the unfolding event of September 11, 2001, click here.  It’s still fresh in my mind today and when I see the images, they bring it ever closer as if it just happened.

Sometimes things in life are hard to understand or leave us even more confused and the feelings of helplessness will try to take control of our lives.  That’s when we need to cling to God to strengthen and guide us.  The beautiful bible verse from Deuteronomy 31:6 is a good reminder that He is in control.

 The LORD himself goes before you and will be with you; He will never leave you nor forsake you.  “Do not be afraid; do not be discourage.”

4th of July Fireworks, Happy Birthday America

Happy Birthday America!

The sights and sounds of fireworks on the 4th of July never get old ….. from the anticipation of it to start, to the loud “boom” sounds, then the amazing display of lights in the sky.  The picture above is a little sample of what we saw last year and looking forward to another great firework display on the 4th of July!

USA flag

A beautiful sight of the US flag flying high in the sky with the rainbow in the background.  The day I took this picture, the weather was interesting with a mixture of wind, rain, and partial sunshine.  I was sitting in the bleachers watching my son play flag football down on the field.  There was a slight opening in sky for the sun to come out and within a few minutes a rainbow appeared near the flag pole.  Glad I was able to capture that moment and share it with you.

Easter, He is Risen {What a Friend We Have in Jesus}

Easter, He is Risen

Jesus paid the price for us.
He did it all for you and me.
He is Risen, Indeed!
Easter is the day we celebrate the resurrection of Jesus Christ.
He is alive and with us, our savior and our friend.

“What A Friend We Have In Jesus,” is a beautiful hymn revealing the love Jesus has for us.  I have heard and sang this hymn many times and never get tired of it {especially when Alan Jackson sings it}.  I hope you enjoy listening to this hymn with a little bit of country twang as much as I do.

Easter, He is Risen

A simple cross made from sticks and twine.  An easy and fun craft project to make with kids on Easter Sunday.  I made these crosses in three different sizes for displaying, attaching to bags and baskets and for other uses.

cross measurements
large, 6″w  x  10 1/2″h
medium, 5″w  x  10″h
small, 3 1/2″w  x  6″h

I like how the display of the three crosses turned out in the large pedestal compote bowl.  I used floral foam presoaked in water to form the mound.  With a sharp knife, cut the foam to the desired shape if needed.  Arrange the three crosses on the foam and firmly push the long end of each of the sticks into it, about one or two inches. Fresh moss and flower blossoms were gathered earlier from outside and used to cover the foam.
