Tomatoes and basil are finally ready for picking in my garden. I like growing the small variety tomatoes because they will ripen earlier than the large varieties.
Tomato, Mozzarella, and Basil Salad
Ingredients
- 3 cups small tomatoes
- 1/3 -1/2 pound fresh mozzarella
- 15 or more basil leaves
- 3 tablespoons good olive oil
- 1-2 tablespoons good balsamic vinegar
- Kosher salt
- Freshly ground black pepper
Directions
Slice the tomatoes in half and shred the mozzarella into little pieces and place them on a platter with basil leaves. Drizzle with olive oil and balsamic vinegar. Sprinkle with salt and pepper and serve.

Okay! Way to get me out of the box, instead of the traditional tomato sliced caprese salad, this way I can eat it easier, and prettier….yum….are those kalamata’s in there or purple tomatoes?
They are tomatoes and very sweet. I will have some for you when you come over!
