A colorful and Refreshing summer drink to serve at a gathering with family and friends is White Sangria flavored with citrus, melon and mint.

My version of white sangria is light, sparkling, and slightly sweet. Before serving, pour chilled sparkling water and a dash of simple syrup into individual glasses, stir and enjoy.

Ingredients
4 cups assorted melons such as watermelon, cantaloup, and honey dew {seeded, peeled, and cut into bite-size pieces} and citrus such as orange, lemon, and lime {thinly sliced}
¼ cup fresh mint leaves
½ cup orange liqueur {e.g. triple sec/cointreau}
1 bottle white wine {e.g. Sauvignon Blanc or Pinot Grigio}
1 25 ounce bottle sparkling water
simple syrup {optional}, recipe here
ice cubes, for serving

In a large pitcher or a glass jar, combine fruit, mint, wine, and orange liqueur. Stir to combine and refrigerate for 1 hour {or up to 1 day}. To Serve, spoon fruits and sangria mixture into individual glasses, add ice, sparkling water, a little bit of simple syrup, stir and serve.

It has been a beautiful week with temperatures in the high 70s and low 80s …summer in the northwest. I was in the garden often doing some cleaning, pruning and spreading a lot of mulch. At the end of the week, with Bill’s help we got our little table and chairs out and spent some time in the garden. The peonies are in the middle of their blooming season and the fragrance from the flowers are sweet as can be. I love this time of year and the opportunity to be outside.

The rain and gray clouds are back this week along with my sweaters… so glad I was able to spend a lot of time outside last week. I’m looking forward to many warm days ahead!
